Nestled within Tai Kwun, one of Hong Kong’s most significant historic monuments comprising the former Central Police Station, the Central Magistracy, and the Victoria Prison, the project aimed to convert a former prison hall into a Spanish fine-dining restaurant.
Meticulously crafted, the chef’s counter and dining tables throughout the restaurant were custom-made from selected red marble, evoking a Spanish Mediterranean luxury. The consistent use of red marble visually connected the three dining zones: the open seating area to the east, the central chef’s table, and the private dining room to the west. Extending the red marble pattern onto the carpets served multiple purposes—it absorbed sound, protect the existing granite flooring, and transformed the once austere prison space into a warm and inviting dining environment.
The red-marble-patterned carpets also delineated distinct dining areas: the rectangular open dining space, the semicircular area for the chef’s table with 8 seats, and the enclosed rectangular private dining area for 10 guests. Adhering to strict regulations against alterations to the existing structure, a new door seamlessly integrated with a newly constructed stand-alone semicircular wall, discreetly concealing the kitchen entrance, and minimizing damage to the historical site.
All walls, doors, and custom-made chairs were upholstered with sound-absorbing fabrics that matched the tone of the granite columns, creating a subtle yet historically rich ambiance. Along the partition wall separating the kitchen and dining areas, semicircular sound-absorbing relief walls echoed the arches along the veranda outside. To effectively conserve the historic building while maintaining visual appeal, all mechanical and electrical equipment was concealed behind fiberglass shells that matched the granite columns, ensuring visual consistency throughout.
This project masterfully blended modern functionality with historical significance, offering guests an exquisite dining experience within an iconic heritage site.
